Ingredients
- 1 large head of broccoli, cut into florets
- 1 tin butter beans, drained and rinsed
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 garlic clove, crushed
- 1 lemon, zest and juice
- 2 cups cooked brown rice or quinoa
- 2 tbsp plain yoghurt or tahini
- Salt and pepper to taste
Method
- Heat the oven to 220°C (200°C fan).
- Toss the broccoli and butter beans with the olive oil, paprika, garlic, salt and pepper on a large tray.
- Roast for 18 to 20 minutes, until the broccoli edges are charred and the beans are crisp.
- Stir the lemon zest and half the juice into the yoghurt or tahini to make a quick dressing.
- Divide the grains between bowls, top with the tray-bake and drizzle with the dressing and remaining lemon juice.
Why it works
Beans and whole grains together give you protein and fibre in one bowl, which keeps you fuller for longer. Roasting at high heat is what turns broccoli from something you tolerate into something you actually want to eat.
